Apple Cinnamon Overnight Oats

INSTRUCTIONS

• 3 apples, peeled and diced

• 1 cup uncooked steel cut oats

• 4 cups almond or coconut milk

• ¼ tsp salt, 

• 1 tsp cinnamon, 

• 1 tsp vanilla, 

• ⅓ cup pure maple syrup or local honey

Place all ingredients in your crockpot and set to low before going to sleep.  Allow to cook for 6-8 hours overnight.  Top with sliced apples, toasted nuts, flax seeds or additional cinnamon.  This makes 4 portions.  To re-heat, add a splash of almond or coconut milk and heat in a microwave or stove top stirring occasionally until heated through.
