Mediterranean Salad in a Mason Jar
Layer ingredients in mason jar - starting from the bottom:
- ½ lemon, squeezed
- 1-2 Tbsp extra-virgin olive oil
- salt & pepper to taste
- protein: chickpeas, chicken, or both
- grain: quinoa, farro or brown rice
- chopped veggies: tomatoes, bell peppers, cucumbers
- greens of choice: romaine, spinach, arugula, mixed greens
- topping options: pumpkin seeds, walnuts, feta, etc.
Pour out onto a dish & toss when you’re ready to eat.
