Mediterranean Salad in a Mason Jar

Layer ingredients in mason jar - starting from the bottom:

  • ½ lemon, squeezed
  • 1-2 Tbsp extra-virgin olive oil
  • salt & pepper to taste
  • protein: chickpeas, chicken, or both
  • grain: quinoa, farro or brown rice
  • chopped veggies: tomatoes, bell peppers, cucumbers
  • greens of choice: romaine, spinach, arugula, mixed greens
  • topping options: pumpkin seeds, walnuts, feta, etc.

Pour out onto a dish & toss when you’re ready to eat.
