Grilled Steak Skewers with Pepper Barbecue Sauce

Serves 4

INGREDIENTS:

1 to 2 lbs. grass-fed sirloin steak, cubed

2 bell peppers, cubed

1 onion, cubed

Sea salt and freshly ground black pepper

Wood or metal skewers

Pepper Barbecue Sauce:

1/4 cup minced onion

1 garlic clove, minced

4 oz. tomato sauce

1/2 cup homemade or organic ketchup

1/4 cup apple cider vinegar

2 tbsp. fresh lemon juice

2 tbsp. chili powder

1/2 tsp. cumin

2 tbsp. raw honey

1/8 cup freshly ground black pepper + more to taste

2 tbsp. coconut oil

Sea salt to taste


INSTRUCTIONS:

To make the sauce: melt the coconut oil in a saucepan over medium heat, then add the garlic and onion.

Cook until soft and fragrant, add all the remaining ingredients, season to taste with additional pepper and sea salt, stirring everything together.

Bring to a soft boil, lower heat and simmer 15 to 20 minutes, or until sauce thickens.

Let the sauce cool down while preparing the beef skewers.

Thread the beef, bell pepper, and onion alternately on the skewers.

Brush generously with the sauce and marinate in the refrigerator 2 to 8 hours (optional). If you want to save some sauce to serve, divide it in half so it isn’t in contact with the raw steak.

Preheat grill to medium-high heat.

Grill the skewers 2 to 3 minutes per side or to desired doneness.

Let cool 2 to 3 minutes, adjust seasoning to taste, and serve with extra barbecue sauce.
