Kristin's Granola
Ingredients:
4 cups old fashioned rolled oats (gluten-free if possible)
1 ½ cups chopped nuts of your choice (I use pecans, pepitas, walnuts, sliced almonds, walnuts and some unsweetened coconut flakes)
1 Tbsp chia seeds
½ tsp sea salt
½ tsp cinnamon
1 tsp vanilla
½ cup melted coconut oil
½ cup maple syrup or honey (or a mix of both)
1 cup dried fruit (cranberry, cherries, blueberries, etc.) Add after baking!
Instructions:
Preheat oven to 350 F and line a large-rimmed baking sheet with parchment paper.
In a large mixing bowl, measure out all of the dry ingredients.
Mix in the oil and syrup/honey, and mix well.
Pour the granola onto the parchment lined baking sheet. The key is to use a spatula and spread the granola into an even layer about ½ inch thick. Make sure that the edges are all neat.
Bake on TOP SHELF for approx. 20 minutes until it is light brown. Do not stir it (if you want it chunky).
Take out of the oven and let it cool for at least 30 minutes, and then break it apart so you get some nice big pieces. Add the dried fruit!
Serve with fresh fruit and some almond milk or put on the top of chia pudding.
