Smoothie Bowl with Paleo Granola
INGREDIENTS:
Smoothie
1 cup fresh raspberries
½ cup fresh blackberries
½ cup almond or coconut milk
½ cup coconut yogurt or whole greek yogurt
1 Tablespoon almond butter
1 teaspoon ground cinnamon
Paleo Granola
raw chopped almonds
raw chopped pecans
raw chopped walnuts
raw chia seeds
raw pepitas, or pumpkin seeds
raw sunflower seeds
unsweetened coconut flakes
no-added-sugar, dried currants
1 Tablespoon pure maple syrup
1 teaspoon ground cinnamon
2 Tablespoons unrefined coconut oil, melted
pinch of sea salt
INSTRUCTIONS:
Paleo Granola:
Combine and mix all ingredients in a medium-sized bowl. On a baking sheet lined with parchment paper, spread the granola out evenly. Bake at 400 degrees F for about 10 minutes, or until the nuts look golden brown.
Smoothie Bowl:
Blend all ingredients in a blender until smooth. Pour into a small bowl with room at the top for toppings.
Top the smoothie bowl with paleo granola, cacao nibs, a dollop of coconut yogurt or greek yogurt, and a dash of cinnamon.
